Suggest a better descriptionWash potatoes and pierce each with a fork a couple of times. Rub the outsides of the potatoes with 1 Tbsp of the butter and then wrap each in foil. Bake at 400 degrees for about an hour until potatoes are tender and easily pieced with a fork.
Remove foil and let the potatoes cool for 10-15 minutes.
Cut potatoes lengthwise in half and remove the insides into a bowl leaving the skins intact.
Mash the potatoe filling with butter, sour cream, milk, and seasoning until smooth. Add additional milk if necessary. Stir in 1 cup of the grated cheese. Spoon the filling into 6 of the potatoe skins and top with remaining cheese. Return to oven at 350 degrees for 15-20 minutes until heated through and cheese is melted and bubbly on top.
