Suggest a better descriptionPrep the potatoes for cooking. While potatoes are cooking start cooking the meat on medium heat.
Cook meat until brown and caramelized. (about 8 minutes)
Add onions, garlic, chili powder, cumin, paprika, cinnamon, salt, tomato paste & cook another 5 minutes.
Add beer & beef stock. Stir to loosen up meat from bottom of pan. Reduce heat & simmer for 10 - 15 minutes, until thickened.
Drain potatoes. Before returning potatoes to pot saute scallions/onions in butter 1-2 minutes. Add potatoes, milk, egg yoke, salt & pepper. Mash up. Fold in 1/2 of the shredded cheddar cheese & allow to melt.
Pour meat into casserole dish. Top with cheesy potatoes. Sprinkle with remaining cheese & greens of scallions.
Place in oven to brown the top about 5 minutes.
May want to serve with a dollop of sour cream. ~Enjoy!
*Start cooking the potatoes & ground beef at the same time.
