Cut the chicken into 2-inch chunks. In a large Dutch oven, heat a skiff of oil over medium heat. Working in batches, add chicken and cook, stirring, until browned on all sides, transferring the pieces to a plate as they're done and adding more oil as necessary between batches. Brown sausages, then transfer to a plate and cut each sausage into 4 or 5 pieces. (Neither chicken nor sausage needs to be cooked through at this point.)
Add celery, carrot, onion, salt, pepper and a drizzle of water to the pot, cover and sweat vegetables for 3 minutes. Remove lid and scrape up browned bits, then let any liquid boil away. Brown vegetables slightly, adding a little oil if needed. Add garlic and flour; cook stirring, for 2 minutes.
Return chicken, sausage and any accumulated juices to the pan, add stock and bring to a simmer. Stir in thyme sprigs, reduce heat and simmer, uncovered, for 20 minutes, stirring occasionally. Add apple and cook, stirring occasionally, for 15 to 20 minutes or until apple is softened and sauce is thickened. Discard thyme sprigs, then stir in lemon juice. Remove from heat and stir in cheese and cream.
