Suggest a better descriptionflatten cleaned chicken breasts with a mallet to a thin , even thickness. Season with salt & pepper and dredge in flour. Shake off excess flour. heat the butter and olive oil in a sauté pan. Sauté chicken on both sides until cooked through. Transfer chicken to a plate and keep warm. Remove excess fat from the pan and over medium heat, add scallions, orange juice, brown sugar, ginger and mustard. Scrap brown bits from the bottom of the pan. Cook about 5 minutes until thick and reduced. Return chicken to the pan and coat. Serve immediately and garnish with fresh zest.
