Try this Chicken cashew stir fry recipe, or contribute your own.
Suggest a better descriptionHeat 2TB oil in wok over medium heat. Fry cashew nuts and sliced garlic until just browning (a few minutes). Remove from pan but leave the oil in.
Turn up heat and add chicken pieces, tomatoes and onion. Stir for a few minutes until the chicken is mostly cooked through.
Add fish, soy sauce, vinegar and sugar.
Add rest of vegetables (including the white part of the spring onion) and stir for another few minutes.
Check the seasoning - depending on the variety and ripeness of the tomatoes they may throw out the sweetness and acidity so it will need adjusting.
To serve add in the cashews and garlic and green part of the spring onions.
