Great chili to make in the crock pot and have ready when you get home from work.
1. Heat 1 tablespoon oil in large nonstick skillet over medium-high heat.
2. Add chicken; cook and stir until lightly browned, about 5 to 6 minutes.
3. Coat inside of slow cooker with nonstick cooking spray; add chicken.
4. Return skillet to heat and add remaining oil.
5. Stir in onion, bell peppers and garlic; cook, stirring occasionally, until starting to soften, about 3 to 4 minutes.
6. Transfer to slow cooker and stir in diced tomatoes, tomato paste, white beans, corn, chili powder and salt.
7. Cover; cook on LOW 7 to 8 hours or on HIGH 3 to 4 hours.
8. Serve with shredded Cheddar cheese, diced chives and sour cream, if desired.
