Heat olive oil in large skillet over medium heat. Salt and pepper the chicken, then dredge in flour. Cook 7 min per side or until done and golden brown.
Remove from skillet and reduce heat. Melt butter and cook shallots and garlic until soft, 2 minutes. Add wine to skillet and simmer until reduced, 5 minutes. Add cream and cook 5 minutes to thicken. Remove pan from heat and add spinach and 3/4 teaspoon salt.
Stir until wilted. Slice chicken diagonally into strips. Return to skillet or serve on top of spinach . Garnish with parsley and lemon wedges.
