Suggest a better description1) adjust rack to lowest position in oven. heat to 350.
2) In large Dutch oven over medium heat, toast flour, stirring constantly until begins to brown. about 5 minutes
3) off heat, whisk in oil until smooth. cover pot. transfer to oven and cook ~45 min until roux is deep brown and fragrant.
3) remove pot from oven and whisk roux to combine
4) stir onions, bell pepper, celery, garlic, thyme and cayenne into hot roux and cook over medium heat until veg are softened. stir often. about 10 min
5) slowly whisk in chicken broth. increase heat to med-high. bring to simmer and transfer to slow cooker.
6) stir sausage, okra and bay leaves into slow cooker. season chicken with salt/pepper and cook 4-6 hours on low.
7) transfer chicken to cutting board. let cool then shred. let stew settle for 5 minutes then skim fat.
8) stir in chicken and let sit until heated through. stir in scallions and parsley. serve.
