Mix olive oil, spices and red wine vinegar in a container. Cut chicken into approximately 3 cm cubes and marinate in the refrigerator for at least 4 hours and up to 24 hours prior to cooking.
Mix all aioli ingredients together in a small bowl and set aside/refrigerate until serving.
Heat canola oil in a large pan over medium heat and thread chicken pieces onto skewers. Fry chicken kebabs for about 15 min, until cooked through, turning often. Serve with Aioli.
