1 Brown the chicken pieces on all sides in a large pot or dutch oven in some cooking fat.
2 Remove the chicken pieces, set aside, add the onions and garlic to the pot and cook until the onions are soft, about 5 minutes.
3 Add the chopped tomatoes, white wine, herbs de Province and season to taste with sea salt and freshly ground black pepper. Bring to a simmer and simmer for 10 minutes, stirring occasionally.
4 Add back the chicken to the liquid and cook for another 45 minutes.
5 Add the homemade or Dijon mustard, adjust the seasoning if needed and serve.
