chicken stewed in a rich paprika sour cream sauce served over spatzle noodles
Melt butter in a heavy pan and cook the onion till lightly browned, then add chicken that has been seasoned with salt and pepper. When chicken pieces are browned, remove from the pan and set aside. Then add paprika to pan and cook for 1 minute; add the tomato and 1/2 cup of broth, lower the heat, and simmer for about 7 minutes. Return chicken to pan, cover and cook for 30-40 minutes. Remove chicken to a warm platter. In a sm. bowl add flour and enough water to make a smooth flour paste. Slowly add this to pan with another 1/2 cup of broth and cook for about 3 minutes till it thickens. Then add the heavy cream. When it is heated through lower heat to very low and whisk in tempered sour cream to the sauce, blending it quickly without letting it boil. DO NOT BOIL, It will curdle. Then add chicken back into sauce and let heat through on very low heat. Serve chicken and spoon sauce over spatzle noodles.
Once you add the tempered sour cream do not allow sauce to boil. It will curdle. I make this dish every year for my husbands birthday. We can't eat it often, it is a very rich sauce. I serve it with my cucumber salad or a plain green salad is fine with this dish.
