How to cook the chicken
1 - preheat oven to 375
( wash chicken & pound)
2 - coat w egg
3 - coat w breadcrumbs & Parmesan
4 - fry @ 1 min each side in olive oil
5- should be partially cooked so brown & crisp on outside
6- add sauce at bottom, chicken, parm cheese & white mozzarella, then @ 1 tablespoon of sauce ok top
7-bake for 15 mins
Sauce: 1 per serving
1- stir & cook 1 tablespoon olive oil, garlic, 1/4 tsp salt / pepper & red pepper for 30 secs
** add basil
2- Add can of whole peeled tomatoes to boil then simmer for 15 mins C
