Kristine's Chicken Parmesan recipe that was on an old nasty piece of paper and she always lost it, but found it so Eddie typed it into this website for her. Love you!
Saute 3 cloves garlic chopped and 1 medium chopped onion in 3 tablespoons oil. Add and simmer 3 minutes the following:
6 (8 oz) cans tomato sauce (original recipie called for 2 cans, Kristine wrote 3 but thinks she likes that doubled to 6)
1/2 tsp. basil
1 & 1/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. oregano
Dip chicken in beaten eggs, then in bread crumbs. Pour all sauce in 9x13 inch buttered casserole dish. Place uncooked breasts on top of sauce. Sprinkle with 1 cup Parmesan cheese. Bake 45 minutes at 350 degrees uncovered. Place Monterey cheese slices on top of chicken. Bake until cheese melts, 5-7 minutes. Note: Recipe may be made ahead of time and refrigerate. Do not freeze. Serves 8.
