Small dinner for two, scale up for more people
1. Chop onion, garlic, and oregano. Add roughly a tablespoon of olive oil to a high walled skillet or pot over medium heat. Add onion and garlic and cook until the onions begin to soften, roughly 3 minutes. Add in tomatoes and a little bit of water to desired consistency. Crush tomatoes if using whole or if large chunks. Season with salt and pepper and red pepper flakes (optional). Let simmer for 10-15 minutes.
2. If using pasta, heat salted water in pot. Add pasta and cook according to package directions.
3. Prepare breading station using three large bowls: One with panko and parmesan, one with beaten egg, one with flour. Butterfly chicken into two halves, season lightly with salt+pepper, then coat chicken in egg, before dredging with flour. Repeat with other half. Then dip both halves back into egg, before dredging thru panko mixture.
4. Heat veg oil in skillet over medium-high heat. When pan is hot, add chicken and fry, each side about 3 minutes or until golden brown. Transfer to paper towel lined plate to dry.
5. Turn on over broiler to high. Add mozzarella slices to chicken to cover most of the top. Place in oven and cook until cheese starts to melt and turns brown. Remove and serve immediately.
Taste sauce when its almost done, and add seasoning as needed.
