Boil chicken breasts in water for about 45 minutes. Slice chicken into small cubes. Mix ingredients together. Whisk together; mayonnaise and cole slaw dressing. Toss into salad. Chill for about 2 hours (but not over night) before serving. Top with halved cashews.
