I adapted this from a chicken skewer recipe I found on the net, made a stir fry, it was delicious
Mix sauce ingredients in a small sauce pan, bring to boil, simmer until thickened. Approximately 10 minutes. Remove from heat set aside.
Mix brine ingredients, put chicken into brine refrigerate for at least 30 minutes.
Take chicken out of brine, discard brine. Put 2 tablespoons oil into hot wok, add chicken stir fry 4 minutes, remove chicken.
Add remaining 2 tablespoons oil to wok, stir fry cauliflower, red pepper, and onion, until crisp tender, add pineapple, and reserved chicken. Stir in sauce and heat through. Add salt and pepper to taste.
Serve over rice.
