1. In large pot, heat oil. Add garlic, onion, carrots and celery. Cook for few minutes.
2. Add ginger and saute for 30 seconds. Add chicken broth, chicken, and remainder spices.
3. Bring to boil and add chicken. Cook for 10 minutes.
4. Add couscous and cook for 20-25 minutes or until chicken is fully cooked.
5. Remove chicken, transfer to cutting board and shread. Put chicken back in pot. Add broth as necessary.
6. Serve with cornbread or roles.
