In a large frying pan, combine soy sauce, sugar, garlic, ginger and onion powder. Bring to a bowl over medium heat. Add chicken and simmer until cooked through and sauce is syrupy.
Transfer chicken to platter and sprinkle with chopped cashews. Serve with rice.
