Really yummy but watch the amount of liquid or else it will become a kind of soup. Nice served with green beans and brown rice.

1- Coat the chicken pieces with seasoned flour. Add a tablespoon or two of olive oil into a large frying pan and heat on high. Brown the chicken pieces. Put the browned chicken into a small casserole dish with a cover.
2- Add a bit more oil to the large frying pan and heat on medium. Gently saute the shallots until soft. Add the sweet wine and simmer until thickened and reduced somewhat. Add the chicken stock and simmer until reduced and thickened. Tie the herbs into a bundle and add into the sauce.
3- Poor the sauce over the chicken and bring to a simmer. Cover and simmer gently for 45 minutes or so.
4- Cover the garlic with water. Bring to a boil and then simmer for 20 minutes or so. When finished, chop the garlic up into small pieces.
5- Melt the butter in the large frying pan. Add the mushrooms in and simmer gently until soft. Remove the mushrooms from the pan and add a bit more butte or oil if necessary. Fry the chopped up garlic. Add the garlic into the mushrooms.
6- When the chicken is cooked, tip in the mushrooms and garlic. Simmer a bit longer uncovered until the sauce is thickened. Stir in the crème fraiche.
