Fantastic bright, zesty curry
Heat a deep sided frying pan, add chicken and brown. Then remove and set aside.
Add the onion, garlic, tomatoes and the chillies and fry until soft.
Grind all spice seeds ( use powder if seeds unavailable)
Add ground spices and lime juice to onion mixture
Add coconut milk and bring to a simmer, return chicken to the pan and cook through
Adjust sauce by reducing if too thin or adding chicken/veg stock if too thick.
Shred basil and stir through just before serving
Don't skimp on the lime juice or basil, they give this curry its brightness
