This recipe should be prepared in advance (2 hours or ideally over night) to allow the marinade to infuse the pork. It takes a short time to prepare and about 15 minutes to cook. It is versatile as it can either be cooked under a grill or on a BBQ.
Cut the pork fillets into 1-inch long pieces.
Add the rest of the ingredients to an electric blender & mix well to make a smooth marinade.
Place the pork pieces in large enough pan with a lid and add the marinade & mix until the pork pieces have an even mix of marinade on them.
Cover the pan with either a lid or cling film & leave in the fridge for at least 2 hours or over night.
Pre-heat the grill on the maximum setting.
Skewer the pork fillets by putting 4 pieces on each skewer.
Place the skewers under the hot grill & cook each side for 5 to 7 minutes – this depends on how fierce the grill is. Be careful not to burn the pork pieces by checking them frequently and turning, if needed.
Serve hot with rice, noodles or warm pita bread.
