Keto-Friendly Veggie Chili

Heat the olive oil over medium heat in a large saucepan.
Add the onion, carrots, celery, and salt, and pepper to taste.
Cook for 3 to 4 minutes, until the onions are translucent.
Add the zucchini and bell peppers and cook for 2 to 3 minutes.
Add the garlic, paprika, and chili powder and cook for
1 minute, until fragrant.
Add the diced tomatoes and chicken broth to the pot and
stir to combine.
Add the kidney beans, edamame, and veggie crumbles.
Bring the mixture to a boil and then reduce the heat to low;
simmer for 8 to 10 minutes, until slightly thickened.
Divide chili evenly between 2 bowls and serve garnished
with the chopped scallions.
Note: If you are preparing this dish in advance, it may be
stored in an airtight container in the refrigerator for 3 to 4
days. For long-term storage, freeze individual portions and
defrost them overnight in the refrigerator before reheating.
