Quick and easy
To prepare the cherry layer
1. Grease and flour a 9 inch round pan that is at least 2 inches deep. Line bottom with parchment paper. You can also use a 9 inch square pan.
2. Blend sugar and cornstarch and toss with cherries. If frozen let them thaw for 20 minutes.
3. Spread cherries on bottom of pan
Preheat oven to 350 degrees
To prepare the chocolate cake batter
1. Combine all ingredients in batter mix and beat with mixer for 2 minutes.
2. Pour over cherries in pan.
3. Bake at 350 degree oven for 20-25 minutes. Use toothpick to test done ness.
4. Cool in pan for 5 minutes before turning over on serving plate.
5. Serve warm or cold with ice cream of dollop of whip cream.
Notes
1. To serve with chocolate ganache over top heat 1/3 cup whipping cream to almost boiling and pour it over 2/3 cups chocolate chips. Let stand 5 minutes and stir until smooth.
