Optional Ingredients: 1/8 t. peppermint extract, 2-3 Tbs. crushed peppermint, 1/4 c mini chocolate chips, 1/4 cup chopped nuts.
Heat oven to 350. Better mini-muffin pans. Melt butter and unsweetened chocolate in heavy pan until melted over low heat. Which together flour, espresso powder, cocoa, and salt. Remove pan from heat and whisk in granulated and brown sugar. Add eggs one at a time, whisking till incorporated. Whisk in vanilla. Stir in flour mixture just until incorporated. Stir in optional ingredients.
Fill muffin tins until just below the top. Bake in middle of the oven for 12-15 minutes until a toothpick has moist crumbs. Remove from pan as soon as they are cool enough to handle and finish cooling on a wore rack.
For Aztec brownies add 1 teaspoon cinnamon and 1 1/2 teaspoons ground chipotle pepper.
