Goes well with Guinness Buttercream Frosting.
1. Preheat oven to 350 degrees Fahrenheit. Line or grease cupcake tins or cake pans.
2. Combine the stout and butter in a heavy medium saucepan and bring to a simmer. Add the cocoa powder and whisk until mixture is smooth. Let it cool.
3. Whisk the flour, sugar, baking soda, and salt in a large bowl to blend.
4. Using an electric mixer, beat eggs and sour cream in another large bowl to blend.
5. Add stout-chocolate mixture to egg mixture (it's important here that the stout-chocolate mixture is cool so as to not cook the eggs). Beat until just combined.
6. Add flour mixture and beat briefly on slow speed. Using a rubber spatula, fold batter until completely combined.
7. Pour batter into the cupcake tins or cake pans.
8. Bake 18-25 minutes (for cupcakes) or until a tester inserted into the center comes out clean.
9. Allow to cool in tin/pan for 10 minutes then cool completely on wire rack.
