Marinade: Combine all ingredients (except carrot, mushrooms, chinese pea pods and water chestnuts). Marinate the chicken cubes for 1/2 hour in glass container in refrigerator.
While marinating, chop the veggies.
Then cut 2 squares (12 - 18 inches) of aluminum foil. Divide chicken into 2 protions. Place 1/2 of each veggie on each equal portion. Spoon remaining marinade over each portion equally. Bring 4 corners of foil up to meet at top. Seal sides of package by folding edge. Place in pre-heated 350 oven for 40-45 min. Serve with rice.
