The only chili I will eat is Cincinnati-style. This chili does not taste like any other chili due to the compliment of spices usually used in sweet dishes and desserts.
Sweat the onion and garlic in olive oil. Add to the pot.
Brown the hamburger, drain, and add to the pot.
Add remaining ingredients to the pot.
Bring to a boil, then cook on medium low for a few hours to let the flavors blend.
My favorite way of serving Cincinnati Chili is over spaghetti and covered in cheese! It's called a 3-way and one of the best things in life. A 4-way is to add fresh diced onion or beans. A 5-way is to add both! My recipe has the beans already added, so you start off with a 4-way.
Also, this cooks down, so it doesn't really make 40 cups. I cook this in an 12 quart pot and didn't fill it completely, more like 10 quarts then it cooked down a bit.
