Suggest a better descriptionIn a blender (or food processor), mash banana, add the almond milk, chia, cinnamon and vanilla.
Blend until the banana is smooth and everything is mixed together.
In a large bowl rip or cut the bread into 1" pieces. Layer 1/2 of bread into pan, sprinkle raisins, add remaining bread (add more raisins on top if you want).
Cover the bread with the milk mixture and using your hands mix well until all the bread is really soaked.
Transfer to a baking dish (if you want, line with parchment paper - I did not find that this was necessary). Cover with plastic wrap and leave in the fridge overnight to really make sure the bread is soaked.
Remove wrap and bake in a 375° oven for 30-45 minutes until warmed through and the top is golden brown.
Store covered in the fridge for up to one week.
