Suggest a better descriptionPreheat oven to 250 degrees. Place a baking sheet in the oven.
Cut bread into 16 slices, about 3/4 inch thick. Combine the egg whites,
egg and cream of coconut in a large bowl. Whisk until smooth. Place egg
mixture in a large shallow dish. Dip bread slices in egg mixture in
batches, turning to coat.
Coat a large nonstick skillet with nonstick cooking spray. Heat over
medium-high heat. Add bread slices in batches and cook, 2-3 minutes per
side until lightly browned. Transfer toast to the baking sheet in the oven
to keep warm. Repeat with remaining bread slices.
Top each serving with 1/2 Tablespoon of the toasted coconut and sprinkle
with confectioner's sugar, if desired. Serve garnished with raspberries.
