Good winter or summer
Boil potatoes in salted water until soft. Drain and mash half and set aside. Crumble bacon and set aside. Fry onion in bacon grease until soft. Dump the onions into a large stockpot. Add the flour and heat until mixture is bubbly and flour is well blended. Add the milk and bring to boil over medium heat, stirring frequently. Watch pot carefully as it scorches easily. Once boiling add remaining ingredients except cheese. Heat until hot and serve garnished with sprinkling of cheese and some of the crumbled bacon.
Notes: I add cream cheese to the milk to make up the cups of milk. Also, add the bacon to the soup.
