Good for a side dish to ham, etc
Stir together the 2 cans of corn, muffin mix, sour cream and melted butter. Pour into a greased 9 x 13 in casserole dish. Bake for 45 minutes at 350 or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 min or until cheese is melted. Let it stand a few min and then serve warm. I am sure you could add some green chilis, sauteed onions and peppers also if you wanted. I think I have put the cheese in the casserole at times also.
