Boil meat in water to cover, then drain (3 times).
Cover with water again, and add all ings except glaze (sugar, cooking liquid and Dijon).
Boil, then simmer, covered for 3 hours. Drain, reserving liquid.
In deep 13x9" roaster, pour glaze over meat. Bake, covered, 35-40 mins. Uncover for last few mins.
