1. Place Pork Rinds in a food processor and process until dusted.
2. Add baking soda and salt, pulse to mix.
3. Add eggs and cream cheese and process until smooth.
4. Add water and blend until fully incorporated.
5. Pour into a bowl and let sit for 5-10 minutes until thickened to consistency of cream of wheat or grits.
6. Preheat a Pancake griddle over medium heat.
7. Spray with cooking spray or oil lightly.
8. Pour 1/4 cup onto the skillet and spread into a 5 inch circle with the back of spoon, making as thin as possible. (Dip spoon in water to prevent sticking)
9. Cook like a pancake.
Tip: Batter will need to be thinned as it sits. Add 1 tbsp at a time.
