Suggest a better descriptionPreheat oven to 400 degrees F (200 degrees C). Rinse the fillets and pat dry with paper towels.
Melt butter over medium-high heat. Saute pepper, shallot, and onion until brown. Add spices and toast. Add garlic and cook until just softened. Let cool.
Combine crab meat, veggies, Worcestershire sauce, and 1/2 cup crushed ritz (use your discretion). Combine the egg and 1 tablespoon mayonnaise. Stir this into the crab meat mixture.
Spoon 1/6th of the crab filling onto the edge of each fillet, roll up.
Place in a lightly greased, shallow baking dish. Brush the flounder fillets with melted butter, and sprinkle with crushed ritz.
Bake the fillets at 400 degrees for 20-25 minutes
