Suggest a better descriptionBrown and drain all meat. Reserve 2 Tbsp. fat from either the pork sausage or lamb. Set ground meat aside
Heat clean dutch oven over medium low heat with reserved fat. Sweat onions with salt and pepper until often and just beginning to brown, 5-6 minutes.
Add Garlic. Stir for 2-3 minutes.
Add Chipotles, stirring to incorporate. Stir constantly for 3-4 minutes.
Add Tomato Paste, stirring well. Stir constantly for 3-4 minutes or until mixture darkens a bit.
Add Rotel, and Tomato sauce, stir to combine.
Add reserved meat.
Add beans, stir for a couple minutes.
Add beer and chili powder. Stir well. Add a pinch (or two) more salt and a bit more pepper.
Bring to simmer.
Add chocolate, stir to melt.
Lower heat to low, and simmer at least 3 hours, tasting often.
