Add olive oil to a large pot on medium heat. Once hot, add in carrots, onion and celery. Cook until onions are translucent (about 5 minutes) stirring occasionally.
Add in garlic and spices. Cook for 1 minute.
Add in chicken broth (add a teaspoon of better than bouillon if desired) and shredded chicken. Bring to a boil.
Pour in heavy cream and bring back to boil.
Mix in pasta and cook until al dente.
Add in dill, parsley and Parmesan.
