(1) Remove and discard thick center stems from green kale. Finely chop the leaves.
(2) Small dice the Roma tomato into ~1/4 inch pieces.
(3) Zest whole lemon over small bowl (can use grater) and quarter the lemon.
(4) Heat 2 Tbsp of butter in saute pan over medium-high heat.
(5) Add yellow onions to hot pan and cook 2-3 min until translucent, stirring occasionally.
(6) Add kale and 1/4 cup water. Cook 2-3 min until leaves are wilted, stirring occasionally.
(7) Add cream cheese, Parmesan cheese, tomato, lemon zest and 1tbsp butter. Squeeze lemon juice from 2 wedges. SStir to combine. Cook 1-2 min or until cream cheese is fully incorporated, stirring occasionally. Remove from heat.
* If creamy kale is too thick, stir in a splash of eater. If too thin, cook until reduced.
