Suggest a better descriptionCook the cubes of swede in boiling salted water for 20-30 minutes or until very tender. Drain the swede well and puree in a food processor or liquidiser until smooth. For a very fine texture press the puree through a sieve. Transfer the mixture to a clean saucepan. Stir in the butter and spices and add seasoning to taste. Gently heat through. Stir in the creme fraiche and pile the mixture into a warm serving dish. Garnish with a swirl of creme fraiche, a sprinkle of coarsely chopped flat leaf parsley and some freshly ground black pepper. NOTES : Classic puree of swede flavoured with creme fraiche, nutmeg and ginger.
