Simple fish recipe that is a family favorite.
Heat oil in skillet. Beat a couple eggs in a pie plate or similarly shaped dish. Crush cracker crumbs. Place them in another pie plate. Take fish fillet and dip in egg wash, then in cracker crumbs. Let fish sit for a minute in the crumbs while oil gets to desired temperature. Place fillet in oil and saute until lightly brown. When the fish is fork tender, flip to brown the other side. Remove, and place on paper towel to soak up any excess oil before plating. Repeat process for each fillet. (May need to add a little oil each time...depends on the quantity of fish, and the type of pan you are using)
Once the fish is plated...add 1/2 - 3/4 cup of Peach Salsa (recipe linked)
