I make a big batch of the seasoning and then I have Fry Spice on hand.
Soak fries in cold water for at least 30 minutes.
Dry off well with a towel and toss with oil.
Bake on parchment lined sheet at 400F for 30 minutes (flip halfway). Crisp up at 425F for a few minutes.
Sprinkle with desired seasoning and Parmesan.
