Easy, healthy marinated salad. Can also use white vinegar. Have not tried it with red wine vinegar though.
In a large bowl, mix the vinegar, oil, water, sugar, salt and pepper. Whisk with a fork.
Add the cucumbers, tomatoes and onion. Mix well. Refrigerate for at least 1 to 2 hours before eating.
