1. Preheat oven to 425.Lightly butter a baking sheet.Sift the flour,sugar,bak.powder,
Bak.soda and salt in large mixing bowl.( or combine in food processor and pulse
once or twice.I do this)
2.Roll cold butter in flour to make it easier to handle, and then cut in slices. roll in
Flour again, then cut into sticks and then cubes?( use the butter sucks in a box)
If making by hand use a pastry cutter to cut the butter into the flour until mixture has a
breadcrumb texture.( butter should resemble little peas throughout the flour) Or distribute the
Butter over the flour in food processor and process briefly to breadcrumb texture?
You should see little bits of butter through the flour! Turn into bowl)
3.Add buttermilk, currants, and orange zest .Mix lightly with fork- just enough
That the mixture is moistened and forms a soft dough.
4.Turn the dough onto a lightly floured surface. knead very gently for8-10 turns
And then pat the dough out into a large circle 1/2 in. Thick.Cut dough in pie shaped
wedges(8 in total is what I do) Brush tops lightly with cream.
5.Bake in oven 12-15min.,until golden brown, Serve with fresh butter and jam.
You can also substitute 3/4 cup of cheese for the sugar.
Can also brush with a bit of milk and sprinkled sugar over the top.
