Suggest a better descriptionPut oil in deep skilled over medium-high heat. When hot, add onion.
Cook until it begins to brown, about 10 min.
Lower heat and cook for 5 more minutes, until very very tender.
Add garlic, ginger, lemongrass, curry powder. Cook, stirring, for about 1 min.
Add mushrooms and cook for another min, stirring.
Add stock and bring to a boil.
Adjust heat to mix simmers, cook for about 10 min.
Stir in coconut milk and cook about 5 more min.
Add soy sauce, taste and add more soy sauce or salt and pepper, to taste.
Stir in ~ 2 tbsp lime juice. Taste and add more as desired.
Garnish with cilantro and serve.
