Adjust curry to taste. Serve over rice.
Cut pork into 1-inch cubes and sprinkle with curry powder. Heat the oil in a large non-stick skillet over medium-high heat; add pork and snow peas; stir-fry for 3 minutes.
In a cup, combine coconut milk, Hoisin sauce and curry paste, blend well and add to skillet. Bring to a simmer then stir in mango and half of the green onions; cook for 1 minute or until heated through. Remove from heat.
Place 1 cup of hot rice on each dinner plate; top each with 1 1/4 cups pork mixture and sprinkle with shredded coconut and remaining green onions. Serve with lime wedges if desired
