Once melted mix in the curry powder
Blend well
Add coconut milk
Swirl to mix
Keep heated.
In a separate pan, sauté garlic in oil
Add chicken and cook lightly
Add potatoes and carrots before the chicken is done.
Add the curry sauce, mix well
Turn to high heat until it starts to simmer
Return to medium low and cook until done.
