Preheat oven to 425 degrees. In a large bowl, combine 2-3 tablespoons of oil with curry powder and toss in cauliflower to coat. sauté until fragrant. Divide cauliflower between to 2 large sheet pans. Season with salt and pepper and roast in the oven for 20-25 minutes, moving around from time to time.
Prepare quinoa:
In a large pot, sauté onions in 1 tablespoon oil, season with salt and pepper.
Add quinoa and vegetable broth and bring to a boil. Lower heat and simmer for 15 minutes, until liquid is absorbed.
Prepare almonds:
Sauté almonds in remaining oil over medium heat until they begin to brown. Sprinkle with sugar and salt and continue stirring until almonds are lightly browned.
To serve:
Combine cauliflower and quinoa and mound on a large platter. Sprinkle with almonds. Serve warm or at room temperature.
