Dark Fruit cake
Preheat oven to 275. Prepare the pans, grease and flour or line with wax paper.
Sift together: Flour, nutmeg, cloves, baking soda and cinnamon.
Add half the flour mixture to: Fruit cake mix, pineapple, cherries, pecans, golden raisins, dates, orange peel, lemon peel , citron almonds and dark raisins in a large bowl.
At medium speed. Cream the butter with the brown sugar until fluffy. Mix in egg yolks. Mix in remaining flour mixture, pineapple juice and molasses. Turn mixture in to a large bowl Stir fruit mixture in by hand. Beat the egg whites till soft peaks and fold into cake mixture.
Fill pans 3/4 full.
Bake:
Large loaf - 2 hours
Small loaf - 1 3/4 hours
Muffin - 1 1/4 hours
Ring pan - 2 1/2 hours
