Under turkey skin and in cavity:
1 stick (8T) Butter
Season salt
Pepper
1t Poultry seasoning
-Mush together and rub under turkey skin and in cavity
STUFFING
2 celery stalks, chopped
1med onion, diced
approx 1cup Chicken broth
1 box stuffing mix
1lb bacon
-Mix bread crumbs and seasoning packet, but don’t cook, adding 1lb bacon (cut into squares); (add chicken broth?)
-Put into turkey
Cook turkey @ 350oF for ~8-10 hrs, turning over every 4hrs
MASHED POTATOES
-Boil/microwave potatoes
-Put through ricer
-Warm heavy cream and put into potatoes
-Stir in butter
-Generously season w/salt and pepper
GRAVY
Take turkey drippings and mix in ~2c(?) chicken broth; thicken with starch/flour
ERIC'S GRAVY
2-3 celery stalks
2-3 carrots
½-1 lg onion
-Brown turkey/chicken in a pan; remove
-Sautee celery, carrot, onion in pan
-Deglaze w/~ ½ -2 bottles white wine (depending on if using chicken or turkey); reduce down completely
-Add ~2-6c chicken broth; reduce ~ ½ way
-Add starch to thicken
-Season w/s&p (add a little water and sugar if too bitter from wine)
