Crispy Golden Finger-lickin' Treat!

1. In a large container, beat eggs until just blended, then mix in salted buttermilk and stir well. Lay chicken pieces in mixture and allow to marinade in fridge for 1 to 2 hours.
2. In a large bowl, combine flour, cornstarch and remaining eleven herbs and spices and mix well.
3. Preheat deep-fryer or dutch oven with enough Canola, Peanut oil or shortening to cover chicken to 370 degrees.
4. One piece at a time, set marinated chicken parts into flour mixture and coat thoroughly. Place on a wire rack and allow to rest for 2 - 3 minutes.
5. Gently lay the rested, coated chicken pieces into preheated deep-fryer and cook until done; about 18 minutes.
6. Remove chicken from fryer and drain on brown paper bag-lined wire cooling rack, placed over a baking sheet. Serve hot for best results.
You can substitute lard for the Canolo Oil (more greasy like the original)
