This recipe yields 24, half chicken portions
1. Cut the chickens into 8 pieces.
2. Set up breading station.
3. Pass the chicken through the standard breading procedure.
4. Heat the fat in a deep fryer to 325 - 350 .
5. Fry the chicken until golden brown and cooked through. Fry light meat and dark meat in separate baskets, as the light meat cooks faster.
6. Remove from the fat, drain well, and serve immediately.
